Farmers Market Veggies

I am a complete nimrod when it comes to knowing about foods and whatnot. Can you freeze veggies that you buy at Farmers Market? Say I cut the onions up and put them in a baggie to freeze. Will that work? Squash, zucchini, carrots, green beans, potatoes, etc. Would it be better to use a vacuum seal? Help!

we tend to saute our onions so if i have a lot of onions (which i do) i saute them all at once then put them into small baggies and freeze. then when i need sauteed onions i just pull out a bag and throw it in the skillet frozen and it's good to go in about a minute!

with other veggies, like carrots, i think you are supposed to blanch them, which i think is when you put it into boiling water for a small amount of time (i'm sure it's on the internet somewhere) and then you put it into ice cold water to stop the cooking. then you lay them out on a cookie sheet so they don't freeze into a big block. after an hour or so you can put them into a baggies together and they won't get stuck.
